It seems that everyone who is using stevia has encountered the distinctive metallic taste. But the sweetness of plain stevia does not behave like sugar, either. You can see from my earlier post that the sweetness profile for REB-A is much more steep and narrow.
New results from the SugarLike research team has identified another issue that will give stevia formulators problems. The change is sweetness is not linear. That means you don’t get twice as much sweetness when you use twice as much stevia.
